Bistro One is located at 1294 South Broadway on the antique row of Broadway. Owner Alex Waters, Chef Olav Peterson, and Sous-Chef Travis Lorton have come together to create a Parisian style bistro that places an emphasis upon American Cuisine with a French flair, while embodying an affordable neighborhood atmosphere. The menu utilizes local, fresh, seasonal produce; while encompassing a true bistro style production of house-made pastas, breads, and charcuterie. Fresh produce grown on the roof top garden such as herbs, lettuces, tomatoes, and assorted vegetables will be used in everyday menu items.
 
Bistro One offers 20 wines by the glass and bottle, hand-picked from all over the world to complement the menu, and offer an exceptional value for the guest. Specialty cocktails are composed of hand squeezed juices, fresh fruit and herbs, and top shelf liquors. The beverage menu is also composed of an international beer list in the bottle and on draught, specialty teas, coffees, and artesian non-alcoholic beverages.
 
Training and hiring of an experienced staff will ensure that the guest is taken care of in an exceptional manner, exceeding all expectations being placed on food and service. The main goal of the restaurant is to develop a long term, lasting relationship with the community, and our neighbors, while providing a quality product that is driven by value and affordability.
 
Bistro One is open Tuesday through Sunday for Dinner beginning at 4:00pm, and serving until at least 10:00pm every night. Friday and Saturday night dinner will be served until 11:00pm. Happy Hour is daily from 4:00pm until 7:00 pm. The menu offers lunch and brunch on Saturday and Sunday in the next few weeks, and dinner will also be served on Monday night.
